Stuffed Pork Tenderloin

This meal was designed after a co-worker described it to me.  I literally went on my lunch break to the local grocery store, picked up all of the ingredients that I could remember and went to work figuring out how to stuff a Pork Chop.  It was fun figuring out how to make a purse like shape out of this piece of meat.  Cutting the Chop half way down then slicing the fibers inside with a very sharp blade proved that anyone can do this.  The deeper you shred the fibers the more stuffing you can place inside.  

The Brine is what changes people to become Pork Chop lovers again or for the first time.  Most people hate Pork Chops because they dry out and are super tough.  Setting up the Brine before work or at lunch is very crucial.  The salinity penetrates the meat and tenderizes for a great meal.  Even though these chops will go in the oven, they will not come out like before.

How to Cook

Soak Pork Chops in brine. The bring will be 2 cups water to 1/4 cup of salt. You can do this in the morning before you go to work, it is fine to leave it in the brine all day.

Chop the apples to your liking I prefer them to be fine shreds this is easier for stuffing the meat.

Finely dice the onions to add to the mix with the apples. Cross cutting before chopping the onions makes it easier to dice.

Add in as much crumble blue cheese as you would like. I am a cheese enthusiast so I add a bit more than most.

Butterfly the pork chops. Make sure the knife is sharp and sturdy cut the chop down the middle about 1/4 of the way down, then run your knife on the inside splitting the fibers as to create a pocket for the filling.

Chop up your cooked bacon to add to the stuffing, do not worry about the grease, the rest of the stuffing will soak it up.

Keep filling the Chops with an ample amount of stuffing. The more you push the wider the Chop will get, who cares that is just more flavor.

Plating is fairly simple after hearing, you can use a fork to grab the chops but I prefer tongs. The green beans can be arranged how ever you like, I see now that I did not add enough for each plate, do not worry, there will be plenty in your box. Please enjoy.
